Employee Recipe Highlight: Irish Soda Bread

Ingredients

  • 3 cups of all purpose flour
  • 1 cup of sugar
  • 3 tsp baking powder ‘level’
  • ½ tsp baking soda
  • 1 stick of butter (or margarine)
  • 1 egg beaten
  • 1 cup of buttermilk
  • 1 handful of raisins

 

Instructions

  1. Preheat the oven to 350°.
  2. Combine all dry ingredients in a bowl.
  3. Add the butter, egg, buttermilk and combine. Add the raisins last. Mix by hand, not by mixer.
  4. Use a 9” pie plate, grease with butter and dust with flour. Move the dough into the plate.
  5. Score the top of the dough with an “cross” before baking.
  6. Bake for one hour.
