Time to make from start to serve about 1 hour. Will make around 10-15 servings.
5 lbs potatoes, that are cleaned and peeled and cut up.
4 tbsp of butter
1 ½ cup of milk
1 cup of chicken stock
¾ cup of butter
3 cups finely chopped celery
2 cups finely chopped sweet onions
¼ cup chopped parsley
½ tsp salt
½ tsp pepper
8 slices toasted white bread, cut into cubes
3 eggs beaten
You need to boil the potatoes until they are tender, then drain. Begin to mash them in a large bowl and add the 4 tbsp of butter, milk and chicken stock.
As the potatoes are cooking, in a large skillet over med-high heat, melt the ¾ cup of butter add the celery, onion and parsley. Sautee this until tender, (usually around 7-10 minutes)
Then add the salt, pepper, at this point reduce your heat to medium and add the toasted bread cubes.
Make sure you stir frequently for the next 5 minutes.
Remove the skillet from the heat and fold into the mashed potato mixture. Also fold in the beaten eggs and stir everything together well.
Prep a greased or sprayed 13” x 9” or larger pan. Cover the pan with foil and bake at 350 for 25 minutes. Then remove foil and bake for another 15-20 minutes or until lightly browning on top.
Serve and watch your family and guests as they enjoy! Just don’t give out the secret recipe. ;)
